How To Cook An Egg Like A Pro

There’s no need to grab breakfast at a diner when you can make eggs like a pro in your very own kitchen! So pull up a stool at your kitchen island, grab a cup of coffee, and read on to learn how.
The perfect scrambled eggs.
There are two methods when it comes to scrambling eggs, and both are equally good. It just depends on your preference. Both start with whisking together your desired amount of eggs, plus a splash of milk (if you like your scrambled eggs fluffy). Pull an appropriately sized non-stick pan from your cookware organizer, based on the amount of eggs you will be preparing, and set it on the stovetop over medium-low heat (just hot enough to cook without browning). Add a tablespoon of butter and swirl to coat the pan. Then add the whisked eggs and sprinkle on some salt and pepper from your spice rack to taste.
If you prefer softer scrambled eggs, grab a spatula from your kitchen cabinet utility drawer and start stirring with a constant motion. This method of cooking allows you to control how wet your eggs are before serving and creates a creamy, curd-like texture. If you prefer firmer scrambled eggs, let your mixture sit in the pan until the edges start to set. Then, lift and fold inward, allowing the liquid to fill the gaps on the outer edge. Repeat this folding method until your eggs are fully cooked and formed into bite-sized morsels.
Sunny side up, over-easy, or fried?
Sunny side up eggs feature that runny yolk that is often used for dipping buttery slices of toast. Cooking over medium heat allows the white of the egg to set and helps to prevent overcooking the yellow yolk. The entire process takes about three minutes, with zero flipping. While delicious, this method is not without risk, because it is difficult to ensure the eggs are fully cooked, and they can have a slimy texture if not prepared correctly.
While still lightly fried, over-easy eggs cook on both sides. The trick is to use lots of butter so your eggs don’t stick to the pan and break in the process of flipping. While they are slightly more cooked than sunny side up, eggs over easy still have a runny center, though it will likely be a bit thicker and gooey in consistency. If you prefer your eggs crispy and completely cooked, fried is the way to go. Poached or Hard Boiled?
If you prefer your eggs lighter and a bit less greasy, opt for poached or hard boiled. Poached eggs have the same runny yolk as an over-easy egg, but are simmered in a bath of water instead of sizzled in butter. While they exist, you don’t have to have a special pan for poaching. For perfect hard boiled eggs, place your eggs in the bottom of a shallow saucepan and cover with water from your kitchen sink. Slowly bring to a gentle boil and simmer for five minutes. Take the eggs off the heat, cover with a lid, and let them sit for 15 minutes. Use a slotted spoon to remove the eggs, place them in a colander under cool running water to stop the cooking process, and then chill tightly covered in the refrigerator until ready to eat.
